One thing I do when I don't have my finest scales around, is I balance the penny on tip of my finger and tap it with another penny... the copper ones will ring while the zinc ones do not. Of course I am not searching through thousands of pennies by hand, but it still helps.

Another way instead of flipping them is to just do the drop test, again the copper one will ring at a higher frequency and the zinc ones just make a clink sound.

I use a propane torch...if they get hot and turn red, it's copper, and if they melt it's not. This way I can visually tell if an '82 has been checked because they turn a different color after you torch them.
