Will they insure collectable coins?

No, as far as I have been able to find, the only carrier insurance that will cover coins and bullion is USPS Registered Mail.
UPS is not liable for loss or damage for a Flat Rate Box shipment. You may declare a value for the package up to a maximum of $500.00, for an additional charge. If you declare a value, UPS's liability will not exceed the value declared in the event of loss or damage.
