Is it worth separating a dishwasher into pieces or should I just sell the whole thing as shred?
Any guesses what I might get for a dismantled dishwaher?

not much there... I scraped one a while back and took a sledge hammer to knock off the motor in the bottom... did not break it apart... sold it as "electric motor".

Oh, and there was an Al plate in there that came loose after I knocked the electric motor off.

Don't forget the wires and any brass fittings. Yards near me will buy them as light iron or shred, regardless of what components are attached.
A lot of modern appliance motors have aluminum windings, and are worth less per pound. $0.11/lb vs. $0.17/lb near me.

si took one apart this week. casing is clean sheet, frame came apart easy too. wire harness, and motor. took me a half hour. worth maybe 4.00
